I've been reading, learning, and trying stuff for about a month now. I think the smokes in my blood at this point. The wife was wonderful enough to purchase me a chargriller pro with the side fire box for my B-day. And she's been smacking her lips with what's come off ever since.

I tried inverting the charcoal pan in the cooking chamber, but found temp wasn't quite even enough. I then bought three 6"x18" strips of metal like someone posted, and spaced them out in the chamber, and the temps are about 5-8 degrees different from end to end. Also, extended the chimney down to the cooking grate level with dryer vent...seems to have helped as well.

I've supplied some pics of some ribs, and butts I did for my birthday first week of June.

Thanks to Jeff for the rub receipe, and sauce. They went over quite well. Gotta try a Fatty next, it just sounds soooo good!

I find that Leinenkugels Honey Weiss goes quite well with the smokey treasures. Shout out to my Northern roots. Hopefully someday I'll be worthy for entry to the Order of the Thin Blue Smoke.

Welcome to SMF Stephen! Great looking grub you got there, and I like the smoker... I own one too! I see you did the chimney mod to it already; that was a good move. I have modified the crap outta mine...

Great looking Q, man! I've got the same smoker and I love it! I tried my first fatties this last weekend - you definitely have to do them.

It's a honey wheat beer. Leinenkugel is the brewery and "Honey Weiss" is the style.

There's a huge Packer Backer fan base here, and the Johnsonville's are grillin' on Sundays. I imagine you'll be making your own brats before long.

Leinenkugels is a brewery in Chippewa Falls, WI check out their website. http://www.leinie.com/ They have about 12-15 different brews. I've tried them all except for their Summer Shandy (can't get that here yet.) I think that the Honey Weiss and Sunset Wheat go best with the que.

It's finally available down here in Central Kentucky. It used to be that everytime I went home to see the family in Northern WI I'd fill the bed of the truck up with the Leine's, and come home and share it with all my friends around the grill.

I first had it at Famous Dave's BBQ in Hayward, WI. It was also the first time I tried brisket, and ribs...smoke was never in my fathers bloodicon_sad.gif. I tried for many years to get that smokey taste on my gas grill with a smoker box...but...well...you know. Just nothing like that long slow smokey flavor.

Hey Shellbellc I enjoyed some Yuengling Premium that my buddy brought back from PA on his last business trip. Gotta say it's pretty good. Can't get it round her though.

Keywesmoke...The gas grill is good for something. Wife likes the chedderbrats, I'm a beer and bratwurst guy...lovem

PackerBacker, you may know this brat method, it's from a NASCAR RV buddy and it works best on a campfire but will work on a grill.

Beer Can Brats.

Open can of Bud Light,drink while cutting the tops off of empty cans.While wife cuts up onions and garlic I build a fire and drink another Bud Light.Put Brats,Onion,and Garlic in beer cans with tops cut off.Top off cans with remainder of beer in hand.Grab another Bud light and set cans on open fire to begin cooking.Beer level needs to be kept up do to evaporation and consumption,which is a good excuse when wife grumbles about the frequent trips to the cooler.After 5 minutes flip brats end to end in beer cans.Drink another Bud Light.Remember to keep the beer level full in the cans,so grab me another two beers on your way by the cooler.After 5 more minutes I let the beer evaporate a little so as to singe Brat just a little.Drink the Bud Lights someone brought me.After sereing is complete remove cans from fire and put brats on bread,not buns as we are ruffing it.Consume Brats and 2 more Bud Lights.When finished stand and toast to your success and start staggering to the track for the nights festivities
