Hello all. I have been a BBqer for years and am now taking the leap to smoking. Wife got me a smoker for fathers day. It is a char-broil smoker with side fire-box and large smoking chamber. First experince was not good. I tried to smoke pork ribs and not knowing what i was doing made it a disater.

I keep reading about 3-2-1 in the forum but can find out what it is. Is this a secret? The forum will not let me gain access to the site. Any helper out there?

WELCOME!
Best thing to do is KEEP ON SMOKIN"! That is how you learn. Do a pork butt, it is easy and hard to kill. Will get your confidence up.
Buy a remote digital meat thermometer (or two) and use it.
Ask about what you need to know, the answer is here.
And post pics of your smoking endeavors. We LIKE pics!

Hey, the first time I fired up my smoker, I didn't know what I was doing or getting into. I had some major disappointments, but learned from my mistakes. So, each time I fired up the smoker, I got better. Then I found this place... what a blessing!!!

Don't get discouraged and most of all, keep trying, you'll get the hang of it soon. Ask what you don't know, share what you do.

And take pictures... we like pictures!

There is a ton of info here and at times it can be overwhelming. Do not be discouraged. You will succeed.

What specifically were the problems you encountered on your first smoke? If you give us some details I am sure we can help.

Welcome, I started smoking a year ago and what i did was i found a step by step recipe (like the ones on the smoking meat website) and followed it as close as possible. As time went on i slowly picked up things and started to understand my smoker and the smoking process. Believe me you are going to become verey addicted to smoking and this website. Enjoy it.
 
Welcome to the SMF Calismoker. The guys (and ladies) are right. The more you fire up the smoker the better you'll get.

Now when u get addicted to it that's when the fun really begins.
 
Keep us posted on your progress. It will help the people like me who havn't even fired it up yet. Looking forward to getting my smoke on this weekend though!
 
The biggest problem was trying to regulate the temperature which as time went I could control around 250. Need to get it down a little lower. Also I was cooking with all oak. The flavor was really strong. Is using just oak for a problem? Or is it better to use charcoal and suplement with wood for flavor?
