I searched and can't seem to find any info on whether a Boston Butt for pulled pork is better w/ or w/o the bone, or if it's just personal preference.

Can anyone help me out with this?

Thx!

I have done a few Butts, all of which had the bone in. That is one way of knowing you have smoked that bad boy to the correct temp., because the bone will wiggle inside the Butt when it is ready to pull.

Yep, bone in.....on my last butt, after the rest in the cooler the bone fell out as I was placing it on a platter. That's a pretty good indicator that 1. the meat is done and 2. it is pretty tender as well........

I don't know why but I think it tastes better with the bone in. Mama always said the meat is sweeter closest to the bone. I'm sure she didn't invent the saying but she alwasy said it!

The one I just finished was bone in and it fell of the bone when I went to pull it. I don't think I would want to do it any other way.

The one we just had was bone in. Fell right off it, no hassles and it was mighty tasty.
