Getting ready to pull a brisket,Beef short ribs and some sausage stuffed bell peppers off the smoker. Had a heck of a time keeping temp. steady. wish me luck. JoePDT_Armataz_01_12.gif

Looks ok, I think I had trouble holding a steady temp.Ribs and peppers look ok. The brisket may be a litttle dry.I will try with the Pics. I am not to swift with posting pics.

Did you wrap your brisket? Spray it with apple juice? Wrap it and put it in a cooler?

Do I sound like a nagging mom or what? biggrin.gif

I jumped the gun I let it rest everything turned out really goodPDT_Armataz_01_34.gif . Of course the Wife and Kids did not care for itPDT_Armataz_01_27.gif .But I had a good time!icon_razz.gif

The cook is usually the most critical of their own work so it sounds like you were a success.

I have been thinking of doing some stuffed peppers myself... post some pics if you can.

Glad it worked out for you. What did the wife and kids not like? Maybe you ould tweek the rub or something?

My wife thought the Brisket was to spicy.I used mustard and a store bought rub. she does'nt like ribs or peppers. Kids did not like it because it was not made at Wendy's or Pizza hut.
My oldest boy would have probably liked it but he was not here.
OH well.

Yeah my youngest doesn't like good Q either. Fortunately my wife and oldest do and I guess that means I'll just to have to eat more!

Get a really tomatoey BBQ sauce for the kiddies - like kraft or something sweet. They eat that stuff like ketsup. Put it on the side and let them dip into it.

NOT LIKE RIBS? Is your wife a vegitarian? Or is it the fattiness which can sometimes happen?
