He smoked a Boston Butt, using a brine of:
1 gal water
12 oz. pickling salt
8 oz of molasses
He stated those ingredients were the best for dissolving in cold water.
He then smoked it in a homemade terracotta smoker.
Here is the rub he used:
Rub:
1 teaspoon whole cumin seed
1 teaspoon whole fennel seed
1 teaspoon whole coriander
1 tablespoon chili powder
1 tablespoon onion powder
1 tablespoon paprika
grounded up in a small hand held coffee bean grinder and sifted onto the meat.
It looked really good, he did a great job.
