Ribs first attemp

Local market has Spare ribs on sale for $1.99 lb , so tomorrow I'll be making my first ribs. Gonna use the 3-2-1 method. Hope the rain holds off, but if it does ,oh well not gonna stop me! Think I'll throw a chicken or just some wings and a fatty. I'll keep ya posted !!

After the ribs are in foil is there any reasom to apply more smoke? Any other tips ?
 
Ribs are my next project...i've done a picnic, boston butt, brisket and fatties. So far the advice in here has been impeccable. My take on smoke after foiling is: you're wasting good wood. However, i'm far from an expert so I hope someone will edify us...........

Thanks. That is kinda what i figured, but it never hurts to ask. I love trying smoking something for the first time. How did you like the picnic? I've done a Boston and it was great.
 
hey jeff, rain or not, the ribs must go on! Teacup had a post about trimming those down for a st. louis cut but my experience has me removing the strip of meat on the back, the brisket i think its called, makes for a nice snack, cooks more evenly, good luck and keep us posted
