Smokin' some butt (porn)

Today's smoke, tomorrow's feast; two Boston butts, rubbed and slathered with yellow mustard. Fired up the CG and got her to 225, the butts were at room temp, grated them and we're on our way! I started out with lump charcoal to get a good base of coals, now I am using apple wood to keep her smokin'.

I'll put on a batch of Dutch's Wicked Beans soon...

BTW, that pic was after 3 hours...

More porn

Well, I finished up around 0'dark:30 last night.

I took the butts off at around 160*, foiled them and returned to the smoker. I put the Wicked Baked Beans on at that time also.

I left the beans on for about 2 hours, they were simmering really well. I foiled them and brought them in the house. The urge to taste test got the better of me, so I tried a spoonful. OMG!! AWESOME!! Even my wife, who doesn't like baked beans, loved them! Thanx Dutch!!

I removed the butts at 200* wrapped them in towels and let them sit for another 1 1/2 hours. When I removed the foil, they were as moist and tender as I have ever seen, falling off the bone tender. PDT_Armataz_01_34.gif I pulled them, cleaned up my mess and called it a night.

Needless to say, pictures last night were out of the question, so I took these today. The beans and pork are right out of the fridge... you can see some of the solidified pork fat scattered throughout the beans.

FYI, the chimney shot is one of the mods I did to the smoker. It made a big difference and did not get in the way at all. I fabricated a sheet metal bracket to hold the tubing in the corner of the lid and pop-riveted it in place. The other major improvement was flipping the charcoal tray upside down in the cooking chamber. I had very even temps across the grates.

Thanks everyone!

The Mama's Day feast was a hit! The pulled pork is my best to date, if I must say so my own self. I finished it off with my version of Jeff's finishing sauce. Very yummy! I also made red cabbage coleslaw for the sammiches.

Dutch's beans were outta this world... everyone went nuts over them. There was hardly enough left for lunch today!

My grandkids love my chicken, so at their requests, I BBQ'ed some chicken for them. I rubbed the chicken with my own special rub blend, wrapped it in cellophane and let it sit in the fridge about 6 hours. I fired up the Weber with lump charcoal, then proceded to light up the neighborhood once again with the smell of smoke and Q. I finished the chicken off with Jack Daniels BBQ sauce... I prefer my own, but I didn't have all the ingredients on hand, so this did well in a pinch.

My wife made some of her awesome potato salad and deviled eggs, then baked two rubarb and strawberry pies. (Served with vanilla ice cream... yum!)

It was a perfect meal for an absolutely perfect day. It's so wonderful getting together with family and enjoying a good meal together.
