I found this recipe for pork. I used it on a pork butt and it turned out excellent.

1 cup fresh squeezed orange juice
2 tablespoons soy sauce
1 tablespoon chili powder
1/4 cup EVOO
1 teaspoon thyme
Black pepper to taste


I let it marinate for two days. After the first 24 hours I turned over the roast. I then smoked it with apple and a tuch of hickory. My family loved it.

Citris fruits go great on smoked food. Orange and limes are great to smoke with and lemons are great for the finshing sauce.
