Outstanding as always Meowey, looks spectacular. My internet was out since Saturday night, so now I have the Monday morning drools....lol.

Finished Enchilada Pictures

It's Monday and here are the final pictures.

Pans of Enchiladas and my Spanish Rice



Enchiladas plated with rice and beans.



I made the enchilada sauce today with the liquid that was in the foil packet that the beef finished cooking and rested in. It added a certain beefy smokiness to the sauce. I need to remember to do that again.

This cat wants to thank Dutch for posting his recipe for these enchiladas a couple weeks ago. Everyone here agrees that it is a winner.

That looks fantastic!

Where do you go on the site to find all the recipes? Theresa posted gypc's sandwich recipe when I asked (thank you again) and I found the Mac & cheese on the "sides" link, but do you have to dig through all the beef posts to find Dutch's enchilada recipe... or any others?

The recipes link, in the bar on the left side of the board, doesn't seem to go to member recipes. Is there another link?

Here is a link to Dutch's post - it is a sticky at this time right at the top of the beef forum. You are correct about the links to the left, they go to forum administrator TulsaJeff's other sites. He is the reason we have this forum to share our experiences with each other.
