Hi All,
Trying out spare ribs for the 1st time tomorrow. I did baby backs a few weeks back and they were really good.
Trying a sauce I've never tasted (Stubbs)
Thinking I'll do the 3-2-1 method I've read about on the fourms.
The plan:

Tonight: apply rub, soak mesquite chunks
Tomorrow: (3) heavy smoke ribs (2) mop with sauce and foil (1) no smoke just heat.


If anyone is in the Sacramento Area, you'll be smellin my ribs downtown around noon!
Dont try to stop by and get any, I'm sure my wife wont share!

fire it up, follow the directions and enjoy the thin blue smoke.....and then....the wonderful wonderful taste.......ohhhhhhhhh yea......

They turned out pretty good. The wife was happy with the fall off the bone tenderness, but I think I like mine a bit tougher. Next time I'll do 1 rack w/o the tin foil.

Also, I used mesquite wood, which was all they had at the local hardware store.
I think next time I'll try different wood. I had big chunks, they didnt seem to have alot of smoke, and the ribs could have been a bit smokier for me.

Glad your ribs came out ok...but next time try not soaking the chunks....they were spending more time drying out than smoking..therefore not much smoke flavor...
 
frieza79, Welcome to SMF. That's one thing about smoking ribs-everyone has their own tastes like fall off the bone and others, like you prefer a bit of resistance to the bite. Around here if you say "tough" you'll get told right quick that you didn't leave it alone long enough!!

Glad your ribs came out ok - next time try using Hickory Chunks if you can find them - Hickory loves ribs!

I like a little "chew" to my ribs too. I pull mine as soon as I see signs the skin starting to pull from the edges.
