The Polder Dual Probe Thermometer meat/doneness temps are preset and can't be manually set. I'd recommend the Maverick ET-73.

As smokemaster said, it is on pre-set temps for the meat chosen. I have an Oregon Scientific that is set up the same way. I just use what ever temp. is at or close to what I want. The Polder isn't wireless, but does have two probes for convenience. If you decide to buy it, let us know what you think of it.

I haven't tried that one, but I do have this one:

I really like it for a non-remote thermometer. It is a dual temperature one too. The large bulb area at the end of the cable is for the chamber, and the probe itself is for the meat. It really does a good job in my opinion.

The drawback, if you plan on wrapping your meat with foil, you loose the chamber temp of the large bulb....
