I am new to the smoking game. I have a ECB smoker and I did some ribs last week. I had the temp at 220 and was expecting 5 to 6 hours the ribs would be done. After 2 1/2 hours the ribs were done. I had a full pan of water and I am not sure what happened. I install a good temperature gauge as a modification, but I am not sure what I did wrong. Any advice would be appreciated.

What kind of ribs? Is your thermometer calibrated? Fuel Source? But most important, how did they taste? if they were juicy, smokey, and tasteful to you. ya did nothing worng. You just had a fast cook. If they were tough, and raw on the inside, I would think the thermometers are off. I may use cooking times as guidelines, but in reality, the meat will be done, when the meat is done.
