Brisket freezing question...

Ok, so I think I may have goofed on this one. I smoked a few brisket flats for my son's wedding a week or so ago. I didn't carve one of them up because I also smoked some pulled pork and a few other people brought some dishes. Mistake on my part because the brisket was devoured. Anyway when I got home I was to tired to do anything so I just vacuum sealed the 8 pound(not sliced) flat and tossed it into the freezer. My question is can I thaw it out use it for a couple different dishes and then refreeze without hurting the quality, or do I need to use it up?

i think you might end up asking for problems if you thawed it and then refroze it again. I suspect it would get horribly dry. can you saw through the frozen chunk with your wifes electric knife? ( dont use yours, it might dull it :) )
 
No problem at all. You can partially defrost it enough to be able to cut off a portion with a butcher knife, and then vac seal and back into the freezer. I've done this a few times with no loss in quality.
