Hello All,

I'm Steve and I'm from North Jersey.  I've been smoking meats for over 15 years.  I started with baby backs on my Brinkman Smoke and Grill electric.  It has served me well over the years.  I also have a Smokey Mountain vertical gasser that I tend to struggle with (please see my post in the propane section).  I discovered this forum while researching smoking brisket...  particularly burnt ends and wireless temp probes and have been hooked ever since.  The knowledge and information here is priceless.  I did my first brisket a few weeks ago and it came out pretty good for the first try although it did cook much quicker than I anticipated.  I've done ribs, pork butts, wings, trout and brisket with success and compliments.  I don't plan on being on TV or in any competitions but I do want to get better.  I have already learned a lot from you guys.
 
Hi Steve! Lots to learn here so pull up a chair, open a cold one and read on! Oh-there will be a test later so take notes!
