For starters this is not something I made up on my own. Here is a link to my source:
After conducting research on bacon I found some info on how store bought bacon has water pressed into it to add weight I decided i was going to make my own.
Time for the process:
1 mix ingredients I use raw sugar premixed curing salt with normal salt Jack Daniels Honey Tn black pepper Cheyenne pepper and maple syrup.
Stage two prep meat:
Rinse and pat dry.
Stage three place in bag:
Rub ingredients all over covering completely on both sides my bag is way to big but it's all I had. Note do not use metal the curing process reacts bad with metal.
Stage four place in fridge:
Cure for seven days making sure to flip once a day and massage your meat lol.
More stages to come.
This is by far the best bacon I have ever had. I have made it prolly half a dozen times and it always comes out wonderfully. I was very intimidated making bacon but found it super simple. I'm looking for more of a garlic flavored recipe if anyone has on. I'll post the results in 7 days.
