First Brisket & new Toy

Doing my first brisket today, while working from home. Picked up a thermoworks Smoke this morning after work meeting to help monitor things. Wow the Smoke really shows how much temp variance there is in my SFB duo. I was really surprised to see how hot the opening at the sfb is!!!

I changed things up and put the brisket in a pan to catch the juice, remembered that last minute :biggrin:

Started at 11:45am, is a all natural super duper some sort of expensive brisket so we will see how long she takes, don't know how much it weighed, I'm guessing 4lbs. A friend purchased it, has sat in the freezer for a year so will be any good???? We will see later :>)

Will be eating it Sunday night, not smoking it Sunday because the weather is going to be horrible. So will reheat and serve at friends house. First brisket...... serving people....... SCARY!! People love my BBQ and smoked chickens that I do often so we shall see how this turns out.:grilling_smilie:
 
I had a Dou for my first smoker. Your right about the temp difference. Did you try flipping over the charcoal plate in the smoker so the curve faces down. I found this will help direct the heat to the other end of the cooking chamber. I really liked the cooker, but don't miss the babysitting(to old for that now).  Good luck and let us know how it turns out.

Smoke went great on Friday. Meat now in crockpot warming up getting ready to go friends house in an hour from now. I mixed the brisket juices with some Scottish Nitro Ale and poured that over the sliced meat in the crockpot while it heated up.

Will report how people like it later tonight or tmrw, thanks for all the help and guidance!!!
 
It was a success!!! One brisket lover said it was the best he's ever had.:biggrin:
I thought it was good, my wife liked it so I guess that's what matters.

So here's to the next Smoke!!!
