Hello,

I'm from central Florida living on a farm in the sticks of the Ocala National forest. We have quite a bit of pork, beef, rabbit and chicken that we've raised over the past few years stocking our freezers, and we have a nice smoker to go along with it - except that I don't know much about how to use it. I've tried beef brisket a couple of times and it turned out dry and tough both times, despite my efforts to find a good recipe. So, here I am for guidance. How do you guys make your best beef brisket? Any tips would be appreciated, thanks!
