I think applewood chunks go with the sauce and pork.
Using a foil covered grate over the original ECB charcoal pan that has a 10 lb block in it as my deflector slash heat sink.. 2 inch gap all the way around I would say.

Need to keep temps down.. Pyrex only can take so much heat.

we smoke pork steaks right on the grate .....this will be good as well ....

I am working on something as we speak ...
 
Lol.. just like low oven or slow cooker.. I'm doing mashed potatoes and some green beans with onions and bacon I guess. Didn't brown the steaks so they would go in cold and get some smoke.

Very tender fall off the bone stuff..
I got a heat surprise as I forgot a I added a big pinch of chili flakes.

Over good meal. Worth 5 hours work.
 
Looks good. Mom made these in the oven. Could have used the smoke for more flavor...JJ

Looks tasty,you need to buy some disposable aluminum pans there much more economical by the case.:biggrin:
