Stuffing A Chicken?

Do you guys bother stuffing lemon peel or any garlic/herbs inside when you're smoking a whole chicken? 

Brining now, smoking tomorrow. Thanks guys!
 
Whenever we smoke whole chickens anymore,we spatchcock them,and make stuffing in a pan in the oven ,

spatchcocking is simply cutting backbone out,and butterfly it open and season both top and underside ...
 
When I leave them whole I stuff with a onion , mix my spice with butter and rub that between the skin and breast meat . 
 
Once you try spatchcocking a chicken or turkey, you will never do it any other way!

You can put all the herbs & veggies in a pan with some broth & put the chicken on top.

They cook much more evenly & faster.
