How to not Overcook my meat

Hello,

I'm looking to smoke burgers this weekend and we like our burgers rare, so i'm concerned about overcooking it with the smoker.

My smoker has oven and smoking capabilities, so i'm considering using only this to cook the burger, instead of grilling first.

Any tips for how I can best do this to ensure the burgers stay rare?

Biggest info that I can give you is a good probe thermometer .. doesnt have to be wifi read from your car while you are driving to the store type .. just a good solid probe thermometer and always smoke/ grill by temperature ... not time .. I have a 2 dual probe mavericks and works great ..also a couple of insta read thermometers ..

This! ^^^ A decent digital instant read probe thermometer is invaluable.

Best BANG! for your budget buck is the Lavatools Javelin $25. or maybe the ThermoWorks ThermoPop $30.

But for now, unless you have one over nighted, go pickup a cheap one from WallyWorld or somesuch for around $10.
 
Best way to do it is to cold smoke then grill.
