I don't fire up the ole mes 30 much since I built the mini wsm. It gets mostly ribs.
I decided to smoke some chili today to eat tomorrow. I'm using some maple sticks out of the yard with a little charcoal for smoke. Set on 275. :drool
I just put in alot of stuff I needed to get out of the fridge and cabinets also. Yep, that's a tater.

I do love me some junkyard chili.  Taters, whether Russets, sweet, or yams, make interesting additions to junkyard chili. Plus, they are nice thickeners when they disintegrate. 

Looking forward to the finished chili!
 
Looking good so far. Concoctions like this are always a favorite around our house.

My beef brisket stew was great. I know chili has got to be good.
I did learn to either pre cook potatoes some or put them in longer than you think. The potatoes don't cook much at temps below boiling.
