Hello Gentlemen (and Ladies),

This Sunday I tried my hand at making some stuffed & smoked burgers. I figure its like a cheeseburger but with the cheese on the inside. How hard could it be?

Here's the method I used:

1. Mix ground beef with hot sauce, worcestershire sauce, salt, pepper, chili powder and garlic powder

2. Form two flat patties

3. lay cheese (in this case pepper jack) on one patty and lay the other patty on top

4. Cinch the corners of the patties to lock the cheese in 

5. Smoke for 1 hour

6. Finish on the grill with a final temperature of 155 F.

I found that cooking it as low and slow as possible helped prevent the cheese from running out. Next time I might try to use a binding agent like egg yolk to seal in the cheese better.
