First, with all the things going on late this summer... From the Harvey disaster & clean up, to the devastation that Irma has done & still lookin to unleash & the wildfires in the Northwest. Thinkin of one & all affected by these!

Hey all, had a couple pork butts in the freezer that needed used up & wanted to try somethin new... There's a bunch of stuff still on my "to try list", but settled on Chaurice for this go round! I have to give a shout out to @Foamheart for posting an awesome thread to follow. Appreciate it Foam. If you've not seen his thread, here's what I followed!

The only changes I made was tweaking the recipe just a bit due to my fam doesn't like spicy. Foam had mentioned to cut the black pepper down to 2 TBSP & add some sugar, so added 2 tsp.

Chopped up the green onions, celery, parsley & garlic!


The dry seasonings ready!


Pork butt cubed & ground!


All mixed up & ready to stuff! Done a fry test & wow is this tasty!


Stuffed in hog casings...


Sure lookin forward to having these with a pot of beans or possibly some in a CI skillet with some rice & beans on the side. Thanks again for the thread Foam!

I think you should pack those up and bring those over to Paulina Lake this weekend for my annual wooden boat gathering. Way more fun than going to DriedStick's elk camp!

Richie, these are real tasty! My Dad loves Cajun type food, we took some over & grilled em up... Both Mom & Dad loved em. Gotta make more now. LOL. Appreciate the kind words & point my friend!
