I'm Russ from Modesto, Ca. Been BBQ for 30 years and last 20 on gas, using a 6 burner CharBroil gas grill at this time. I have friends that love to smoke and are pretty dang good at it but I'm not a fan of lot of smoke flavor. I bbq about 3 times a week, the basics for dinner and weekend gatherings-events-tailgates always the BBQer!
With that said, I'm going to try to adapt slowly to smoke taste and incorporate it in my BBQ.
Tonight I'm doing a 16lb briskit for first time. I trimmed the hard fat and cut out silver lining and center fat between cuts. I made a rub consisting of white-brown sugar-, black pepper, cayanne pepper, garlic-onion powder, salt, cumin, paprika and chili powder. Put a hefty amount on each side. I bought some hickory sticks and container to put in grill. I have it over the one burner I have going currently have temp at about 240. First 2 hours I had at 200 and was scared it won't finish in time so bumped it up slightly after reading over posts here last few hours. I made a mop sauce consisting of water, beer, vinegar, minced garlic and some leftover rub and lil olive oil. I will moisturizer it before I go to bed and cross my fingers and hoping for good turnout.
As far as I know everything is going good minus the urge to check it every 5 mins! I haven't been this nervous in a long time! Hoping I can sleep a little bit tonight!
Would just like to add that his is a great site with an abundance amount of info I came across reading everything I can. I hope to learn a lot more from you all and will update how this turns out.
 
Can't say I've ever tried a brisket on a gas grill, but why not. Hope you didn't run out of propane(unless you using NG). How did it turn out?

It came out pretty good. It was definitely a learning experience. Had to move briskit to top level to get the heat. After 14 hours I was only at 156 degrees. at 16 hrs I was at 176. Checked an hour later and it was 203. I'm thinking it was a quick increase in temp so I believe the hot sun played a role in last temp rise. I foiled it and let rest for 2 hours in shade. Everyone seemed to like it at party, they could've just been being nice becuse they knew I was stressing. Lol
 
Cool, glad it was a success. I haven't used a gasser in years so I wasn't sure how long a tank would last.
