Man,

I didn't think I would be so crazy about making salami and sausage. I bough a 15 pound stuffer. (love it).

The 15 pound mixer is not big enough to do what I want to do....120 pounds at a time.

So I have to look for a bigger one.

Again I didn't think I would EVER need a bigger mixer.

The hook is deep.

I completely understand!

I was unhappy with my mixer and sold it off.  I found a great alternative that works wonders.

I use a 7 gallon food grade bucket, 9 Amp (or higher) Corded Drill 1/2" bit capable, and a 46" Hex Shaft Junior Mud Mixer.

You can get a 9 Amp 1/2" corded drill on amazon for $55+

7 gallon food grade bucket on amazon for $29.50.

The 46" Aluminum and Steel Mud Mixer for $27.50 at https://www.krafttool.com/products/by-category/flooring/mud-mixers/by-sku/DC714L


This is about the same cost as a 20 pound meat mixer.  A 20 pound meat mixer can really only do about 16-17 pounds of meat and is what you would need to mix 15 pounds of meat.... BUT those mixers are a HUGE pain to clean.

With the bucket solution you can mix all kinds of meat, I do 20 pounds at a time no problem, it's quick, and cleanup is a freakin breeze!!!

The biggest con of the bucket solution is that I have to hold the bucket with my feet to keep it from rotating but I'm 100% sure I could just buy this 8.5 foot adjustable band and secure some "L" bracket "feet" to the bucket so I could just step on them to keep the bucket from spinning.

Yep After the first go around with bigger lots of mixing, we did the same thing. The MIXER was a PITA!. For 5 pounds it would be great, but 10-20 pound lots are big volumes to mix. The process that you mentioned I saw in another thread and we tried it. It was a gift!

I went that route one as well, 20-25 # mixer was not big enough, We went with a 50# that attaches onto our LEM 1hp grinder and am happy with it. Though 40# of meat at a time is max I think. I did buy a paddle for my drill to use just in case. So far I haven't used it yet. We have become sausage making nuts over the years with a ton of trial and error. We have our favs but always try new stuff when we get down to it.

I'm glad it has worked out for you.  It is so much more awesome and better than those square mixers with the handle and paddles.  I'm never going back :)
