This weekend I got a little smoking in.

Chile Rellenos Dinner
 
September 5th, 2017

This post is not in Chronological order, this was a 2 day cook for dinner. The ABT'S, and Chili Rellenos were made the day before.

Each item is shown start to finish.
Rosemary Chicken and Sage Chicken
with buttered noodles

  • Lets start with the chicken and noodles














Apple Wood Smoked London Broil
  • London Broil with Applewood, one seasoned with my Philly Style Rub.








Barbecued Chicken
  • The Barbecued Chicken







Chicken Taco ABT's,
 
The ABT's were also posted seperately

Whenever I make ABT's, I just throw them together, no measuring or recipe to follow.

Ingredients
  • Cooked Chicken breast shredded
  • Cream Cheese
  • Three cheese blend
  • Jalapenos
  • Bacon
  • Taco Seasoning
  • Cumin
  • Dark Chili powder

First thing first, gotta raid the garden...





  • Shred chicken, and add softened cream cheese, mix well



  • Add shredded cheese, mix will, soften in the microwave for twenty seconds if cheeses don't mix well.



  • Add taco seasoning



  • Mix



  • I do boats or canoe style ABT's



  • Cleaned these with a spoon.



  • Stuff



  • Wrap



  • Season lightly with Cumin and Dark Chili powder



  • Grab a beer



  • Smoke till done (used cherry on this)



  • Enjoy!

Chile Rellenos
 ​
  • Laura starts with the Tomato Cumin Sauce





  • The only variation from the recipe was, we used half of my Roasted Tomatoes, Peppers and Onions.





  • Making the Meringue




  • Meanwhile I roasted, peeled and cleaned the poblanos.







  • Back to the meringue








 
  • Insides of the peppers are seasoned.


 
  • Poblanos are then stuffed and floured.


  • Dipped in the meringue



  • Fried











  • The grand finale



Quick peak at my Dinner the day before. The stuff in the upper right hand corner of the plate, yeah I know...the plate is round... anyway that is sort of an egg pastry thing Laura tossed together. There was some Meringue left over from the Chile Rellenos so I asked her to cook it like funnel cake, so she added some sugar and a bit of flour and it came out quite tasty.

Dam look at that cheese oozing out of the Chile Rellenos.

Chile will be proud of you, very nice BBQ and presentation of it all ... Chile will probably your twist to his recipe as well .....

Good Lord Sqwib. What a meal!!

I can well believe it took 2 days to prepare that meal. And the variety. The pickiest of eaters couldn't fail to find something to enjoy at your table.

I'm truly impressed. Takes a lot of dedication to spend that much time and effort on a meal. The tastes and memories will far outlast the meal.

You've been a busy lil'beaver SQWIB!!

So how's that back yard garden? You share-croppin the neighbor's yard this year too?
I wish, garden is still going strong, Eggplant, mater's peppers, and looks like a few pepper's perked up for a bumper crop. Can't keep up with the Jalapenos, probably smoke another batch of ABT's this weekend (Buffalo chicken).
Planted my fall stuff, Spinach, zucchini, kale, lettuce and laid down some cover crops, oats, crimson clover.
I'll update my garden post this week.
 
Thanks guys. I just need to get out to the smoker more. I guess with the cooler weather coming I'll be smoking and cooking on the pit more.
Rings, I will find out about the countertop.

Great meal SQWIB, I would have to try everything once or twice, and then lapse into a tryptophan coma.

Pray tell, what is the yellow cheese in your chile rellenos encased in?
I've seen/eaten a lot of chile rellenos, and seen a lot of different fillings, but this appears to be new one to me.

Also, what's in the bowl to the right of the Tater Tots?

The stuff in the middle is a 1 oz hunk of cheddar... You can see it in one of the pics.
The bowl next to the tater tots are broccoli/cheddar tots and their awesome.

Gotcha, that is different, but sounds very good as I put diced green chiles in my mashed taters sometimes.
 
The only tweak I'm going to do next time is mix the potatoes with crumbled bacon.
We stuck to the original recipe first time out, I don't like modifying a recipe until I try the original.
Well... I did make a minor change to the tomato cumin sauce
