Had the family over for a Sunday evening dinner, tri tip on the menu. Started with a couple 2 1/2 - 3 lb. choice tri tips from Costco. Seasoned and smoked for just under 2 hours, to an IT of 135*F. (My family likes beef medium to well done). Reverse sear on my gas grill, then wrapped and rested until time to eat.

Santa Maria style, Kosher salt, pepper, granulated garlic.

Smoked at about 240*F with oak chips to an IT of 135*F

On the grill for a quick sear.

Sliced and ready to serve. Yum!

Nice tri-tip! Love that stuff.

I have medium-well fans in my house too. That's one thing I like about tri-tip since it isn't a uniform thickness - I can have medium in the middle while they have medium-well towards the ends and well done on the tips.

I just vac sealed a case of tri-tip from GFS a couple of weeks ago. Took a long time to trim the fat caps and seal a whole case, but it's great steak at a very reasonable price!
 
Tri tip has become my favorite meat to smoke (and eat). It's not too expensive, easy to prepare, and has great flavor.
