Decided to do a brisket for Labour Day... watch some CFL Football this afternoon..
Last brisket I did was an overnight one, going to try foiling this one.. see which we like better.
Also trying something new... using Hy's seasoning salt in place of regular salt, then normal Onion Powder, Garlic Powder and Pepper.
Smoking with Oak and Mesquite for a change.
Put on the smoker at 6AM... its at 154 IT now.
