Hi everyone, I've been a long time reader and finally decided to join. I found this forum about four years ago when I bought my first smoker, a cheap offset, at a scratch and dent auction. I've managed to turn out some pretty good BBQ using it and have used it for smoking summer sausage and cheese as well. I haven't been able to smoke much in the past year or so due to work and having two toddlers running around occupying most of my free time. I spent a few months researching pellet smokers looking for a more "set it and forget it" type smoker and eventually gave up on that due to reading alot of posts complaining about the lack of smoke flavor with pellet smokers. I finally decided to build a UDS. My build is nearly finished minus my thermometers. I had hoped to fire it up and smoke a couple butts and some ribs this weekend, however I'm going to have to wait a couple more days due to delays in shipping because of hurricane Harvey.

I will joe. I've fired it up once so far to season with a mix of lump and kbb with some apple wood chunks I had laying around. I didn't have a thermo mounted so I'm clueless to the temps. Plan to run another test run as soon as my theremos come in. I intend to run a thermometer on each grate and two maverick et-733s. Hopefully I will have a couple racks of ribs on by this weekend
