Hi my name is Dustin and I am very new to smoking meat. I live in Ohio. I recently for the first time did two small pork loins and chicken wings for my first go around. I am using a Charbroil electric box smoker. Everyone pray for me as I have volunteered for the task of doing a full 14# brisket for the upcoming labor day weekend! I will be glued to this site until tomorrow. Thank you in advance for any tips, previous posts, etc that may help me in my first brisket run!

Thanks for the welcome guys. I have two 12 pound packers in an electric Char-broil. The temperature is jumping from 225-250 and not setting. Should I be worried? Any tips? I'm guessing its not sealed very well.
