Hey everyone,

I am new to the forum. I live in Jacksonville, FL. I have a chargriller smokin' pro that i've had about two years. I haven't used it much though. Just did some ribs a few times and a turkey once. The turkey was great. The ribs didn't turn out so well. Recently I went around trying to do some basic mods like extending the stack down to the grate and sealing both the main chamber and the SFB and added some  bricks and flipped the pan under the grates in the main chamber to hopefully act as kind of a deflector plate so I can hopefully even out the temps and keep them stable. The first few times I've used it it was hard to maintain the same temps continuously. On Friday I plan on doing a 9lb Butt I just picked up today. Thatll be the first time using the smoker with the mods. We'll see how it turns out!
