I just did 5 lbs . I used 3 mild jalepeno with seeds . Had great flavor but not hot . I think it was about 2 oz. For the whole 5 lbs. The cheese and pepper taste was very good . I know that's not an answer , but maybe it will help .

I ended up doing 7 jalepeno and 3 poblano in 10 lbs. I roasted them first then skinned and seeded them. They are delicious but the flavor of the pepper was somewhat lost in the mix and there is zero heat to them. My kids love them so that's a plus and I can always kick up the heat with sauce. Next time I won't roast them and I'll leave the seeds in. I was afraid the seeds would make a bitter taste. Here's a few pics

Looks good . Love to roast peppers but put raw in sausage . I'm doing 2 1/2 lbs of polish right now . Gonna add some japs . Plants are Goin crazy .

yes.. I use 3 large, fresh peppers with seeds and all in 5 lbs of meat... I slice em up and then use my slap chopper to give em a rough chop...

I did put cure 1 in mine . Grill them fresh but can always smoke if I want . Glad yours turned out good . The Jalapeno and cheddar makes a great sausage .
