Was so excited to perform my first smoke in my new 30" MES.

Performed all the brine steps.
Pan with a touch of water and ginger ale mix.
Hickory and Apple wood chips.
Set at 250 and... go

First hour was fine - she climbed and I got my first wiff of goodness.

Instructions said it would take 1.5 - 3 hours. I've been sitting at around 150 for the last hour or so - going on about 4 hrs.

I just cranked it up to 275 just to try and get it there.

Oh - I'm using the MES themoteter AND a digital just to be sure.

I read chicken doesn't stall but this.... is... frustrating.

Advice?
 
Hi there and welcome!

Is there a chance that your probe is touching bone in the chicken?

Also both the meat probe and the smoker temp probe are notorious for being off in the MES.  You may not have actually been at 250F in the smoker.  You will need a backup probe to check temp at meat/grate level as well as a backup probe for the meat's Internal Temperature (IT).

My MES40 was always low like 20-30F degrees compared to what the MES smoker probe would report.  This may be happening with you.

Tip, use the lowest rack whenever possible, it will give you the closest/best temp consistency.  Keep it at and best of luck :)
