In Jeff's most recent newsletter, he had a recipe for maple bbq pork tenderloin. Since I had all the ingredients on hand, I thought why not? It's a short quick smoke for dinner.

Pork tenderloins were rubbed with mayo rubbed with some of Jeff's rub I whipped up.


These tenderloins sat in the fridge for about 3 hours until it was time to smoke.

I used my propane smoker for these. Tenderloins were smoked with hickory at 230F. Total smoke time was 1hr and 20 mins when both tenderloins registered 145 IT in the thickest part.

After putting the tenderloins in the smoker, they were basted with the maple bbq glaze after 30 minutes (1 cup pure maple syrup to 2 heaping tablespoons of rub). I find Jeff's rub to be on the sweet side, so I added extra chili powder and some cayenne to the glaze mixture. I basted the tenderloins twice before they were done.

I served these up with corn on the cob and a cucumber tomato salad. I didn't get any final plated pics because of the hungry wife.

Overall these were excellent! The tenderloins had a great balance of smoke, sweet and heat, they were not overly sweet. I would definitely make these again for a nice quick dinner.
