Newbie here. First time making snack sticks. I ground up all my meat yesterday, mixed in my packet of backwoods seasoning and cure, and stuffed my collagen casings and set them in the fridge to cure. I intended to start them in the smoker this morning but ended up having to go into work. My question is will they be ok sitting in the fridge all day today and going into the smoker tomorrow? They will have sat in the fridge for about 34 hours.
