Well elk season will be here in 9 days so I thought I better stock up on my supply for my pack
The habanero I made with elk and pork the Chipotle I did 80/20 ground beef.
I went 50/50 elk to pork the elk did not have anything added to it
All mixed up,,, could have been a little leaner I think but we will see.

One thing I did different on smoking this time was that I pre-heated smoker to 180 so when I opened the door and put in the sticks it would recover to the temp I wanted,,,
I let these sit at room temp for 1hr then into the pre heated smoker I wanted 130 to recover and by the time I got sticks in and door closed it was like 128,,,, perfect,,, let them sit at 130 for 2hrs no smoke,,, then added pitmasters to my a-mazen - tube and bumped 10degrees each hour till smoker got to 170,,,, Pulled the sticks at 152 about 7hrs in the smoker
pulled,,, no water bath,,,, let bloom on counter for approx 2hrs then to the fridge for a overnight stay,,, will vac pac tonight and freeze
