I got a pack of boneless CSRs yesterday and I figured I'd do them up before the football game today..

A little while in the rub.. 


On the kettle with about 1/3 chimney of Kingsford in the vortex, hickory chunk. Dampers just cracked open.


A few hours at around 304 degrees ..

Had a final IT of 212.. Lookin' and smellin' good!


The ribs pulled apart nicely and retained that sweet juicy goodness.. Paired up well with some pinto beans..


It's as simple as that!

They look great!  A few hours on the Vortex?  Mine gets way too hot for a long cook.

I only had 1/3 of a Weber chimney of coals and I didn't let them get fully lit before dumping. I had the dampers opened just enough to see some daylight through them. After the initial while smoke settled down, I opened the lid and placed the ribs. That gave the coals enough O2 to get the kettle up to temp and they idled at 304 for quite a while..

Thanks y'all..

Easily done with 25-30 briquettes and single piece of chunk. The vortex can be a real useful tool for indirect smokes with minimal fuel.
