Burnt Ends with less fat?

Hello. I've done the pork belly burnt ends a couple times and they turn out great. That said a friend said he really like the "hard" part but didn't care for the "soft" part. Is there another cut that can be used to just keep the "hard" part like a pork loin or something with less fat? Thanks in advance.

I did pork loin burnt ends lat weekend.
 
Pork belly would be the worst choice if you want a less fatty cut for burn ends. Loin would certainly be lean, and probably not enough fat in my opinion. Cube up some pork shoulder or picnic. That should put you somewhere in the middle- cheaper too. You can trim out a lot of the fat if you want also.
