I've been smoking the usual stuff lately - spatchcock chicken, pork butts, a brisket here and there, but for the last year or so I've been wanting to throw some beef short ribs on the smoker.  Well, today is the day!  The local butcher had the ribs already separated.  I put some SPOG (well, minus the salt) on them last night and let them spend the night in the fridge.  This morning at 11AM I added some salt and pepper and on to the WSM they went for a ride at 225-240 degrees.  I'm going to do some twice baked (smoked actually) potatoes with them as well, I figured I might as well do another "first" with the ribs.

Ready for "prep".


Basic rub with worcestershire sauce for a binder.


I randomly spot check the Maverick in boiling water and I figured today was a good day to try it.  Close enough, ready to go!


These are some thick/meaty ribs.

 
Thanks Al, I am hoping so!  I should mention that there's 5 ribs total.  I'm going to braise a couple and let the other 3 go no foil to taste the difference.
