8.5 lbs. Diamond cut fat. Pork loin strips with same rub will be under to catch drippings. 8 a.m. start.
This is for tomorrow. Taking it to work for a co-worker.

I'll say one thing, you sure seem to have that ECB dialed in.

It doesn't matter what you smoke, it always comes out good!

Looking forward to seeing this finish!

Temps started creeping down. That means close to 6 hours it's time to check the ash build up. Took the body off and shook this pan to get the ash out.. this is what's left. Good to go! But I added another dozen coals and another Apple chunk.
Took 1 minute and temps creeping back up . [emoji]128077[/emoji]

Think I'm going to go get a pan for this thing and let it go in a pan after its 160. Save some juice for the lady at work. All the rendered fat is in my pan bellow with the pork loin chunks [emoji]128512[/emoji] . Pans I been seeing are $3.99 for 1 dang pan. [emoji]129300[/emoji] I'll go check wallfart

I'm taking this to work for a lady. I needed a pan anyway. She is gonna pull it and she might want some extra juice. I'm taking it to her whole. I just got 10 pans for $4.98. No biggy.
