On 3 hours of sleep before the kids threw me off the couch. 12.5 hours on my converted gas shack abomination on mesquite and a bit of pecan. The shoulder was under the brisket and tastes epic..cant wait to get into later today






Which one do I believe lol

 
I would take them out and do the boiling water test 212* depending on your elevation

If I take them out, it'll be to replace with a couple nice ones. It's converted from gas to stick due to issues at the burner after only a few years, leaks gas lol makes fpr interesting times. Still holds temp and smokes well...jad to reload every 3 hours or so.
 
I'm dying to eat it lol. Was asked to burn some meat for a friends birthday. House stinks so good right now
