Hi everyone. Found myself with couple free days and need a smoke. Maesure spices for Beer,Caraway and Hunter sausage and old fashionsd dutch loaf.

Got my meat separated into bowls, got it all mixed and stuffed.


Today am just went into my preheated MES at 110.

Thanks. Went with small 1 kg. batches since these are unnown recipes to see if i need to tweak it for larger size. Also wanted to thank everyone for their ideas and guidance in this great hobby. Couldn't do it without you.

After almost 4 hrs of hicory took beer and caraway out and finishing in the hat water bath. one done and other ready to come out. leaving the hunter sausage and dutch loaf in to absorb more of the smoke(and heat). So far smell is wonderfull.
