What kind of beef ribs are these?

My wife spotted these at a local butcher and picked them up for me to smoke this weekend. I'm used to smoking beef back ribs but these look a bit different. They are also much larger. Almost like short ribs that haven't been cut. Would appreciate any guidance as to what they are and if they require a different method than ribs typically do. Note that the picture is of two slabs on top of each other.

I'm pretty sure those are, IMPS/NAMP 123a Beef Plate, Short Ribs

A simple rub of coarse salt and coarse cracked pepper, maybe some garlic and/or onion powder and other spices.
Smoke over Oak, Hickory, Pecan, Mesquite, Cherry at 225°-250° for approx 3-4 hours, then if you like you can foil and braise till they're butter tender or falling off the bone, another 2-3 hours.

Or you can continue without braising and cook till they probe butter tender between the bones, approx IT of 195°-205°, average time 6-8 hours.

Wrap and rest awhile before cutting and chowing down

These are approx temps/times
Your meat may vary due to thickness and fat content
And due to air temp/humidity, smoker, how often you open the door and etc
Check doneness by probe and IT.

Thank you for the very helpful response! After doing more research I was also leaning toward plate short ribs so great to have confirmation. Seems the process is more or less what one would follow for back ribs too.

Sure, I will post results Saturday night. These don't seem incredibly meaty either, but along with some corn should be a good meal for the two of us.

Thanks, all. Quite happy with how these turned out but I do think I prefer back ribs.

Similar to what you were cooking, I get Chuck Ribs from Restaurant Depot.  They are better trimmed than the ones that you got and turn out something like this:

I'm glad that you;re getting decent beef back ribs in your locale.  The only ones that I've found in my local supermarkets are barely enough meat on them to qualify as dog treats.

Those look awesome Big Dawg. I've been on the fence for kcbs dues for the restaraunt depot day passes but that just about sells me on it.

If you've got a RD nearby you, you are in luck.  You can, of course, also get great prices on Babybacks, St. Louis, Butts (two to a pack), and Briskets (mine has Black Angus, don't know if all carry them) in addition to the Chuck Ribs.

So, even though you're not competing (I don't anymore) there is still a good reason if you do a lot off cooking.

Plus all the toys ! ! !

One 30 minutes north of us. Would a single membership let my wife or I in separately, as in could she make the trip in my place if she is off or do I need a family membership for that?

I've ended up doing beef ribs quite a few times this summer. Back ribs (x3), individual short ribs, plate short ribs. My last attempt at back ribs was definitely my favorite. Not the meatiest guys in the world but the butcher wasn't stingy either:

I am the Club Manager of an Elks Lodge, so I have a "real" membership, so I don't know exactly how the daily pass works.  I would just give them a call.

Headed over there tomorrow to pick up a couple of butts for this weekend.

Good Luck.
