Good afternoon folks. 

I am going to be attempting a butt and some ribs in a couple weeks on a MES 30. I plan on getting up at the wee hours of the morning to start that butt at 250. A little later in the morning, I am going to put a few racks of ribs on. In the past I have done the 3-2-1 method for the ribs at 225 for the 6 hours. After the s hours I was going to bump it back up to get the IT of the butt to 203. I wasn't going to foil the butt. 

So the question, will dropping the temp affect the butt at all besides adding a little more time on it?

I smoke ribs anywhere from 225 to 280, they come out the same & they just take shorter to cook at the higher temps.

But then I smoke my ribs to temp, I don't go by time.

Thanks for the reply. What temp do you shoot for? Do you use a regular insta read thermometer with the ribs and are just careful not to touch the bone?
