I have cooked a couple butts on my wsm with cyberq atc. normally 8 lbs and it takes about 16 hours at 225.  Can I decrease my temp, say to 210, and increase my cook time to around 20 or 22 hours.  Not puncturing meat so if I understand correctly, I don't have to worry about the 40 to 140 rule.  Just wasn't sure if there is a minimum temp to cook at or a maximum time I can't exceed.  I'm trying to start it say 8 to 10 pm and finish say 5 to 7 the next night so it will cook while I'm at work.  
 
As long as your smoker don't die, that will be fine. Intact meat is internally sterile and getting above 140 in 4 hours does not matter. The SV guys cook at 135 for 24 to 48 hour+ with no issue...JJ
