I wanted to bring some finger food to our little poker gathering Saturday night. I got a couple of pork tenderloins on a good discount at the Wallymart and thought they might make some good cheese and cracker snacks. I trimmed them of silver skin and fat and dropped them into some of Pop's brine with cure #1 for seven days. Out of the brine, rinsed, dried and hung then cold smoked for an hour or so over hickory, then out of the smoker at 146, rested to 150 IT. They sliced up nicely and went well with some butter crackers, a cheese spread and mustard. Definitely a big hit with the poker guys!





I didn't try it, but i bet these would cook up nicely as Canadian Bacon for breakfast or on a small pizza. Anyhow, just another idea of things to do with pork tenderloins.. Enjoy

Imagine sliced super thin on a slicer.    

Alot of uses.
 
I've got some cheese and crackers,bring the meat! That sure looks tasty!

A little update, I sliced some up and tossed it in the skillet while making some eggs. It fried up nicely without drying out. I think the 150 degree mark is perfect for CB.
