Hello and thanks for letting me in, I am new here. I have smoking experience, I have smoked Brisket, Ribs, Burgers and Fish. soon to be Boston Butt. Which is what brings me here. first a bit about my set-up, Its a Camp Chef Smoke Vault, set up to run on NG. Now, I have two Butts I want to smoke this weekend, 8.48lbs and 6.22lbs. I have the prep and rub down, I am looking for a good time estimate so I can plan ahead a bit. I am seeing anywhere from 1-2 hours per pound and some sites just saying 10-14 hours. Also I am seeing a "done" temp at 205 degrees for pulling. I would appreciate any help/assistance you all can offer.

That depends on the temp you plan on cooking at. I like to go hot and fast so the butts I have smoked were in a 275 degree smoker for about 7-8 hours. Others prefer low and slow. Either way you can start your cook a few hours early and hold the meat until you want to serve it.

I am thinking 225 degree. I guess I am a bit confused as I am doing 2 butts, so does both Butts count as 14-15 lbs of butt or do I consider them each, as a 8 and 6 lb? (if that makes since)

I would definitely block out a large hunk of time if you are cooking at 225. Time will not double because you are doing two at once, but one could cook faster than the other. So keep an eye on both after a few hours.

You have more patience than I do. I am sure they will turn out great. Make sure to take some pictures and provide some details on your method.

Well, I have been reading several other posts on Butt. Now I am wondering if 14-16 hours is a good enough. I believe I will crank up the temp to 230-240

Its me again. I have been reading and looks like 1.5 per pound is good if you foil it, and around 2 hours per pound if I don't Foil it. I do not plan on foiling. BUT here is my question, am I looking at 15 lbs of butt or an 8.5 and 6.2 lb butts. I guess what i am asking is, do i calculate the time based on 15 lbs or an 8.5 and just pull the 6.2 earlier.

It's going to be based on 2 different pieces of shoulder. Don't be shocked if the 8lb one isn't done before the 6 lb. Had it happen several times those smaller ones can be stubborn. Good luck and keep us posted.

Thanks Greg

My Plan as of this hour is: 18 hours (16 smoking, 2 resting). No foil wrap. temp on 230 degrees. as far as prep, I will be rubbing with mustard then rubbing with Dillo dust Rub. if it gets ready early, oh well. I will throw it in the oven @ 205 degree. Now, let me know if i am on the right road.

How are you planning on resting it? You can avoid the over. Just wrap in foil then wrap in towels and put it in an empty cooler. It can be held like this for several hours. Wrapping in foil after you take it off the smoker won'r mess up the bark.

I picked up a 7.5lb butt yesterday. I don't have your patience so I will throw it on early Sunday at 275. Should be done by dinner time.

Thats my plan to rest it Drunken, foil it and set it in a Yeti for to hours. if it gets done earlier than my plan, then i will rest it, then put it in the oven to get it warmed for serving.

Even if it gets done two hours earlier than what you planned I would still skip the oven at 205. That meat will stay perfect wrapped tightly in the cooler for four hours. You'll probably have to let it sit for 20 minutes on the counter before pulling so you won't burn your hands.

Update: I put the 8.6 on at midnight, then added the 6.2 at 2:00 am, I then check temps at 4:00am and 6:00 am, since 6:00 am I have recorded the temp every hour. Right now a bit over 12 hours later, I am sitting on 164 and 165 degrees on the butts and smoker at 240 degrees. I have had issues keeping the Smoker temp consistant it been average 225-235 but has spiked to 240. could be because the sun is shining directly on the smoker. but it 1:00 pm right now, id like to start resting at 5:00 pm, pull and eat around 6:30 - 7:00 pm
