Hello all, new poster long time off/on lurker here. Live in Spring Hill, Tennessee and have been into smoking going on 10 years now. I recently formed a competition team with some friends and we have 1 competition under our belts. Small local competition but we took 1st in brisket, 3rd in pork, and we were one unhappy judge away from 2nd in ribs

I use an Old Country Pecos that I recently purchased a 4x7 trailer to mount to. I'm a first time welder and fabricator so this project is going to be quite fun and interesting. I will start a build thread once it kicks off (hopefully soon!). I haven't put together plans on paper, just in my head to this point. Perhaps i'll sketch them up and start my build thread there (surely that will get me motivated to start the real project, right??)
