So there is a flavor with foil that I have really started disliking. The last few racks of ribs that I've done, I've skipped the foil and have been pretty pleased. But what to do for long smokes? Typically for a long smoke, I'll run a wood fire for about six hours and then I'll wrap the meat in foil, scoop my coals to the center of the firebox, and fill with charcoal.
Then I can just walk away, go to sleep, whatever. However, after burning a nice clean fire for six hours to get the perfect balance of smoke on the meat, the last thing I want to do is mess it up with a layer of charcoal smoke sooo.... I've been mean to try some butcher paper.
Well I had butt in the freezer so I decided to experiment. Threw the butt on over oak and hickory about six last night. Didn't have any butcher paper so I used parchment. It wasn't wide so I had to get creative when it was time to wrap. Smoked over a wood fire until 11:30 then wrapped, filled the fire box with charcoal and went to bed after the temp stabilized. Here's how it all shook out.
Rubbed up and ready to go, then on to the smoke. And then an hour and a half in.
Here it is about fours hours in and then all tucked into bed.
And the result. Probed like jello when I took it off and the bone pulled clean with two fingers. It was done while I was still doing chores so I coolered it. The bark was great but I think the cooler softened it a bit. Here it is plated Memphis style with some cucumber salad.
