Hey guy,
I want to age another prime rib for my daughter's 35th BD. Im looking for bone in (at least 5 bone) un trimmed, and there in.lies.my problem...finding un trimmed rib roast...I haven't done an exhaustive search, just a couple meat shops I frequent.
Anybody have a reliable source they'd care to share...ordering it and waiting is fine.

Sweet.. yeah.. Sunday. It's fun to just walk around inside their big cooler and see all those big cryovac cuts all pilled up.. brisket they just raised price of last month to $4.19 [emoji]128546[/emoji]

Yup...I love aged beef and it's so easy...just put it in the fridge with a circulating fan for 40 days.
The last one I did was a 3 bone trimmed and it was marvelous but the process creates meat loss...
So after researching I found starting with untrimmed means your loss is primarily fat you'd trim off anyway...
So I'm gonna give it a shot.
 
I got a restaurant supply I get my brisket from...it was up a buck a pound last month too...
Just under $4.00...
Last year I was paying $2.49.
HUGE price jump but still cheaper than your average steak and better IMO.
